Zucchini Bread Recipe:

2 cups shredded zucchini

1 cup packed dark brown sugar

2/3 cup avocado oil (or oil of choice)

2 teaspoons vanilla extract (or 1 vanilla bean)

2 eggs

1 1/2 cup organic all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 1/2 teaspoons cinnamon

3/4 teaspoon nutmeg

1/4 teaspoon ground ginger

1/8 teaspoon allspice

3/4 teaspoon salt

Optional: 1/2 cup raisins Preheat oven to 350 degrees. Prepare and shred zucchini. Set aside. In a large mixing bowl add brown sugar, avocado oil, and eggs. Mix until combined. Add baking powder, vanilla, baking soda, salt, and spices. Add flour and mix until combined. Add shredded zucchini and mix until thoroughly combined. Grease loaf pan and pour batter into pan. Bake at 350° Fahrenheit for 55 to 65 minutes or until toothpick comes out clean. Enjoy!
